Crunchy Chocolate Quinoa Bark

This Chocolate Quinoa Bark is the perfect combination of crispy, nutty, and chocolatey goodness! Packed with protein-rich quinoa, crunchy nuts, and mineral-rich salt, it’s a guilt-free indulgence.
Ingredients:
- 1/4 cup honey
- 2 tbsp coconut oil
- 2 tsp vanilla extract
- A good pinch of flaky mineral salt (plus extra for topping)
- 1 cup uncooked quinoa (rinsed & dried)
- 1/2 cup raw almonds, roughly chopped
- 1/2 cup raw cashews, roughly chopped
- 1/2 cup mixed raw seeds (pumpkin, sunflower, etc.)
- 300g dark chocolate
- Cacao nibs for topping
Instructions:
- Preheat oven to 180°C and line a baking sheet with parchment paper.
- In an oven-safe bowl, melt the honey and coconut oil together until smooth. Whisk in the vanilla and mineral salt.
- Add the quinoa, almonds, cashews, and mixed seeds (save a handful for topping). Stir until well coated.
- Spread the mixture evenly on the baking sheet in a thin layer.
- Bake for 20-25 minutes, until golden brown and caramelized.
- While baking, melt the dark chocolate over a double boiler.
- Once the bark is done, spread the melted chocolate over the top. Sprinkle with extra nuts, seeds, cacao nibs, and mineral salt.
- Place in the fridge for 30 minutes (or freezer for 15) to set.
- Break into pieces & enjoy!
